The Pot on the Stove
This recipe is my old friend. It has fed my family for years. I still laugh at that. My grandson once called it “pizza soup” before the noodles went in. The smell fills the whole house. Doesn’t that smell amazing? It tells everyone dinner is coming.
You start with the beef in a big pot. Brown it until no pink is left. Then add the onion and garlic. This matters because that sizzle builds the flavor. It’s the foundation of your meal.
A Little Story for You
I first made this on a very busy Tuesday. The kids had sports. My husband was late. I needed one pot for everything. This was my answer. It simmered while I helped with homework.
We all sat down together an hour later. The table was warm and happy. That’s the real goal, you see. Food brings people to the same table. What’s your busiest weeknight meal?
Why It Works So Well
You cook the pasta right in the sauce. This is the best trick. The noodles soak up all that tomato goodness. They become extra flavorful. The starch from the pasta thickens the sauce, too.
It makes cleanup so easy. Just one pot to wash! This matters on busy days. It leaves you more time for stories, not scrubbing. Do you prefer one-pot meals or using lots of dishes?
The Simmering Time
After you add the macaroni, let it simmer. Give it a good 30 minutes. Walk away. The wait is important. It lets the flavors get to know each other. They become best friends in the pot.
Fun fact: The “elbow” shape of the macaroni is perfect for holding sauce. Every little curve catches a bit of flavor! Let it sit off the heat before serving. This helps it thicken up just right.
Your Two Choices
You can make this on the stove. Or use your slow cooker. For the crockpot, add everything but the noodles in the morning. Turn it to low. Your house will smell wonderful all day.
Add the dry macaroni about an hour before you eat. Turn the heat to high. It’s like a welcome-home hug in a bowl. Which method sounds better for your day? I’d love to know if you try it.

My Cozy One-Pot Wonder
Hello, dear. Come sit a spell. Let’s talk about my Easy Mac Pasta. This recipe is my old friend. It has fed my family for decades. I love how everything cooks in one pot. That means less washing up for you. Doesn’t that sound nice? The smell fills your whole house. It smells like a big, warm hug. I still make this for my grandkids. They always ask for seconds.
You just need a few simple things. Ground beef, onions, and some pasta. The tomato sauce and Rotel make it zesty. Rotel is just tomatoes with green chilies. It gives the sauce a little kick. My husband, Frank, loved that part. He’d always say, “Anna, you’ve outdone yourself!” I still laugh at that. Now, let’s get that pot on the stove.
Step 1: Grab your biggest pot. Brown the beef over medium heat. Break it up with your spoon as it cooks. You want no pink bits left. Then, carefully pour off the extra grease. (My hard-learned tip: I tilt the pot and use a spoon to scoop the grease into an old can.)
Step 2: Add your chopped onions and garlic to the meat. Oh, that sizzle! Doesn’t that smell amazing? Stir them around for about five minutes. You want the onions to get soft and sweet. This step builds so much flavor. It’s the secret start to a great sauce.
Step 3: Now, pour in the water, tomato sauce, and Rotel. Give it a good stir. Put the lid on and let it bubble gently. Set your timer for 15 minutes. This lets all the flavors get to know each other. It’s like a little party in your pot. What’s your favorite smell from the kitchen? Share below!
Step 4: Time for the macaroni! Stir the dry pasta right into the saucy mix. Put the lid back on. Let it simmer for 30 to 45 minutes. Stir it once or twice so nothing sticks. The pasta will soak up all that delicious juice.
Step 5: Turn off the heat. This is important. Let the pot sit, covered, for 15 more minutes. This waiting time makes it perfect. The sauce gets thicker. The pasta gets even more tender. Then, just scoop and serve. So easy!

Let’s Mix It Up!
This recipe is like a favorite sweater. It’s cozy as is, but you can dress it up! Here are three fun twists I’ve tried over the years. My grandson loves the cheesy version. Which one would you try first? Comment below!
The “Garden Patch” Twist: Skip the beef. Use a bag of frozen mixed veggies instead. Peas and carrots are lovely in this.
The “Fiesta” Twist: Use ground turkey. Add a big spoon of taco seasoning with the onions. Top your bowl with crushed tortilla chips.
The “Extra Cheesy” Twist: Stir in two big handfuls of shredded cheddar cheese right after you turn off the heat. Let it melt into gooey goodness.
Serving It With Style
This pasta is a full meal in a bowl. But I like to add a little something on the side. A simple green salad with a vinaigrette is perfect. The crisp lettuce is so nice with the rich pasta. A slice of warm, buttered garlic bread is also wonderful. For a garnish, try a sprinkle of fresh parsley. It adds a pop of color.
What to drink? For the grown-ups, a glass of red wine like a Merlot pairs nicely. For everyone, I love icy cold sparkling apple cider. It’s sweet and fizzy. It cuts right through the hearty tomato sauce. Which would you choose tonight?

Storing Your Easy Mac for Later
This recipe makes a big, happy pot of food. You will likely have leftovers. Let the macaroni cool completely first. Then, pop it into airtight containers. It keeps in the fridge for about four days. For the freezer, use freezer-safe bags or boxes. It will be good for up to three months.
I remember my first time freezing it. I was so proud of my future self! A ready-made meal on a busy day is a gift. Thaw it overnight in the fridge for best results. Reheat it gently on the stove with a splash of water. Stir it often so it doesn’t stick.
Batch cooking like this saves time and money. It means a good meal is always close by. This matters on tired evenings. You can nourish your family without stress. Have you ever tried storing it this way? Share below!
Simple Fixes for Common Kitchen Hiccups
Sometimes our cooking doesn’t go as planned. That’s okay! Here are three common issues and easy fixes. First, if your pasta seems too dry, add a little broth or water. Stir it in slowly until it looks saucy again.
Second, if the flavors taste a bit flat, try a pinch of sugar. It balances the tomatoes beautifully. I once forgot the salt and learned this trick! Third, if the meat is greasy, just drain it well after browning. Use a colander over a bowl.
Getting these small things right builds your confidence. You learn to trust your own taste. It also makes the final dish taste its very best. Good flavor makes everyone smile. Which of these problems have you run into before?

Description
Creamy, cheesy, and ready in minutes! This easy mac pasta recipe is the ultimate comfort food the whole family will love.
Ingredients
Instructions
- In a large stock pot on the stove, saute the ground beef over medium-high heat until just cooked. You don’t want any pink remaining. Break the meat up so it’s crumbled in there and then strain off the grease.
- Add the chopped up onions and the garlic to the meat. Saute about five minutes until they are tender.
- Add 3 1/2 cups of water, the tomato sauce, and the rotel. Stir it all together, top with a lid and allow it to cook about 15 minutes.
- Add the elbow macaroni right to the pot. Top with the lid and allow it to simmer for about 30-45 minutes.
- Remove from the heat and allow it to sit about 15 minutes more. We usually allow for about an hour of cooking time.
- Crock Pot Option: This can be done in the crock pot also by adding all ingredients except the noodles and slow cooking all day on low. When you return home, about an hour or so before you are ready to eat, just turn the crockpot up to high and add the noodles. Cook until they are tender. Delicious!
