- In a bowl, mix the ground meat, cheddar cheese, salt, pepper or seasonings, to taste, diced jalapenos and the egg white until combined well. The mixture will be lumpy because of the cheese but should hold together.
- Separate into 4 equal patties.
- Grill the burgers until golden brown and slightly charred on the first side, about 3 minutes. Flip the burgers over and cook until golden brown and slightly charred on the second side, about 4 minutes for medium rare. At the 3 minute mark, add a slice of cheese and allow to melt another minute.
- When ready to assemble, throw another piece of pepper jack cheese on the top of the bottom bun. Top with the grilled burger.
- In a small bowl, mix some light mayo with hot sauce until you like the flavor. Spread that all over the top bun. Add some jalapenos, your bacon slices and replace the top of the bun.
