- Preheat oven to broil (High). Add the cut and open sub rolls to a baking sheet. Add the provolone evenly between the sandwiches. Set aside.
- On a large cutting board layer the banana peppers, red onion, iceberg lettuce, tomatoes slices, salami, pepperoni, and turkey. Carefully start to chop everything on the cutting board, going in one direction first then switching to the opposite direction so that everything gets chopped. Use the knife to push and move everything back together once it gets spread out and keep chopping the ingredients until you are happy with the size. Add everything to a large mixing bowl.
- To the bowl add the mayo, red wine vinegar, garlic powder, oregano, and banana pepper juice. Toss everything together to make the filling for the sandwich.
- Once the filling is ready transfer the sheet pan with the sub rolls to the oven. Bake 1-2 minutes but keep an eye on it the whole time and take out once the cheese is melts and the sub roll is toasted and golden. Remove from the oven.
- To make the sub sandwich add the filling mixture to the warm sub rolls. Serve immediately.
