  1. Cook the bacon. For cooking on the stovetop in a large skillet or on a flattop grill. Lay our the bacon on a cold skillet, turn the heat to medium. Cook the bacon flipping every 3 or 4 minutes until the bacon is browned and crispy to your liking. Transfer the bacon to a paper towel lined plate to drain and cool slightly. For cooking in the oven. Line a sheet pan with aluminum foil. Place the bacon on the foil-covered sheet pan and place in the cold oven. Turn the oven to 425º F cook about 15 minutes or to you liking.
  2. While the bacon is cooking chop the romaine lettuce and dice the tomato(es) and add to a large bowl. Add the mayo starting with 2 tablespoons, toss and mix everything together to coat the mayo. Give a quick taste and decide if you want to add more mayo or not.
  3. Once the bacon is done cooking you can toast the buns using either the skillet or the oven. For the large skillet carefully empty the skillet of the bacon grease, once most of the bacon grease is gone open the sub roll and place cut side down onto the skillet to toast 2 to 3 minutes, repeat with each roll (For a flattop grill simply scrape away the extra grease and place all the rolls down at once). For the oven turn the heat to broil (high). Add the sub rolls to a sheet pan with the cut side open faced up. Transfer under the broiler and toast 1 to 3 minutes, keeping an eye on the sub rolls so they don’t burn.
  4. Chop the bacon into pieces and transfer to the bowl with lettuce and tomatoes. Toss everything together. Transfer the chopped BLT salad into each of the toasted sub rolls. Serve immediately.
