  1. Preheat the oven to 400º F. Place parchment paper on 2 sheet pans.
  2. Finely chop the pecans and set aside.
  3. Roll out one of the puff pastry sheets. Add 4 tablespoons of the apple butter (½ of the apple butter) over the puff pastry. Spread the apple butter out all over the puff pastry leaving about 1 inch without the apple butter on one end. Sprinkle half of the chopped pecan overtop the apple butter.
  4. Starting with the side opposite the without the apple butter roll up the puff pastry into a log shape, trying to keep the shape tight but not too tight that you squeeze out the apple butter. Leave the seam side down on a plate or pan. Transfer to the fridge for 20 minutes. Repeat the process with the second puff pastry and remaining apple butter and pecans, let this one also rest in the fridge for 20 minutes.
  5. On a cutting board seam side down cut each log into 12 even pinwheels, with both puff pastries you will have 24 total. Place 12 on each sheet pan, leaving at least an inch space between each one.
  6. Transfer to the oven, bake 15 minutes until golden brown. Let cool for a few minutes.
  7. While cooking combine the powdered sugar and water into a small bowl, whisk together until a smooth icing forms. Drizzle the icing over the slightly cooled apple butter pinwheels, serve immediately.
