My Soup Secret

I want to tell you about my chicken fajita soup. It is pure comfort in a bowl. It turns a busy weeknight into something special. Doesn’t that smell amazing?

I learned this trick from my neighbor Maria. She broils the peppers first. It makes them sweet and smoky. I still laugh at that. I used to just toss them in raw!

Why Broiling Matters

Let’s talk about those peppers. Broiling them is the magic step. It changes everything. The heat caramelizes their natural sugars.

This gives the soup a deep, rich flavor. It matters because flavor builds in layers. You will taste the difference. Fun fact: Bell peppers are actually fruits, not vegetables!

A Simple Start

Start by rubbing that seasoning right into the chicken. Use your hands. Feel the spices. This makes the chicken tasty from the inside out.

Then, just brown it in your pot. Do not cook it all the way yet. You just want a nice golden color. This is another flavor layer. It matters so much for a good soup.

The Simmering Part

Now, let everything simmer together. The chicken cooks in the broth. This makes the broth itself taste like chicken. It is a quiet, gentle process.

While it bubbles, your kitchen will smell wonderful. This is my favorite part. What is your favorite smell from the kitchen? Tell me, I would love to know.

Bringing It All Together

Shredding the chicken is easy. Use two forks and pull. Then stir in your beautiful broiled peppers. See all those colors? It just makes you happy to look at it.

The garnishes are the final fun touch. Let everyone choose their own. Do you like yours with crunchy chips or soft avocado? I can never decide!

Your Turn to Share

This soup is a whole meal. It feels like a hug. It is perfect for sharing with people you love. That is the best kind of recipe.

I hope you try it. What is your go-to meal for a cozy night? Share your story with me. I read every one.

My Cozy Chicken Fajita Soup

Hello, my dear. Come sit. Let’s make a pot of my Chicken Fajita Soup. It’s like a warm hug in a bowl. I love how the kitchen smells when it’s simmering. Doesn’t that smell amazing? It reminds me of my grandson’s soccer nights. We needed something fast and filling. This soup was the perfect answer. I still laugh at that. He would eat three bowls! It’s so simple to put together. You just need one big pot and a sheet pan. Let’s get started.

Step 1: Prep the Veggies

First, we prep our veggies. Slice a large onion into big, friendly chunks. Cut your three colorful bell peppers in half. Scoop out the seeds and stems. I love using red, yellow, and orange peppers. They make the soup so cheerful. It’s like a sunset in your pot!

Step 2: Season & Brown the Chicken

Now, heat your oil in a big pot. Turn your oven to broil, too. Rub that fajita seasoning all over the chicken breasts. Use about a tablespoon. It makes the chicken so flavorful. Then, brown the chicken in the hot pot. Just two minutes per side. (A hard-learned tip: Don’t move the chicken too soon! Let it get a nice, golden crust.)

Step 3: Simmer & Broil

Add the broth, water, corn, onion, and the rest of the seasoning to the pot. Cover it and let it boil. This cooks the chicken through. It takes about 20 minutes. While that bubbles, put your pepper halves on a pan. Place them skin-side up. Broil them until the skins get blistered and dark. Keep an eye on them! Ovens can be sneaky.

Step 4: Shred & Slice

When the chicken is done, take it out to cool. Turn the soup down to low. Let’s taste the broth. Does it need a pinch more salt? Now, shred the chicken with two forks. It should pull apart easily. Peel the skins off the peppers if they come loose. Then, slice the soft peppers into strips. Do you think the broiling makes the peppers sweeter? Share below!

Step 5: Combine & Serve

Finally, stir the shredded chicken and pepper strips back into the soup. Gently mix everything together. The colors are just beautiful. Now it’s ready to serve. I love setting out little bowls of toppings. Let everyone build their own perfect bowl. It’s so much fun.

Three Fun Twists to Try

This soup is wonderful as-is. But you can play with it, too! Here are three of my favorite twists. They keep things interesting on a chilly weeknight.

Beefy Swap

Use thin strips of steak instead of chicken. Sear them quickly first. It gives a rich, hearty flavor.

Fiesta Veggie

Skip the meat. Add a can of black beans with the corn. It’s so filling and delicious.

Zesty Lime Kick

Add the juice of a whole lime at the very end. It makes the flavors pop and feel so fresh.

Serving It Up Just Right

Now, for the best part: eating! I always serve this soup with warm tortillas for dipping. A big bowl of tortilla chips on the side is great, too. Let everyone add their own garnishes. We love sour cream, avocado, and fresh cilantro. A squeeze of lime is the perfect finish.

For a drink, a cold glass of lemonade or iced tea is lovely. For the grown-ups, a light Mexican beer pairs beautifully. It cuts through the richness just right. Which would you choose tonight?

Keeping Your Fajita Soup Cozy for Later

This soup is a wonderful friend to your freezer. Let it cool completely first. Then, pop it into airtight containers. It will keep for up to three months.

I remember my first big batch. I froze it in a glass jar. The lid popped right off! Now I use plastic containers. Leave an inch of space at the top for expansion.

Reheating is simple. Thaw it overnight in your fridge. Warm it gently on the stove. Add a splash of broth if it seems thick.

Batch cooking like this saves busy nights. It means a warm, healthy meal is always ready. That matters for a happy, calm home. Have you ever tried storing it this way? Share below!

Simple Fixes for Common Soup Hiccups

Is your soup too thin? Let it simmer uncovered for ten minutes. The extra water will evaporate. Your flavors will become richer and deeper.

I once forgot to taste before serving. It was very bland! Always taste at step eight. You can add a pinch more seasoning then.

Worried about the chicken drying out? Do not boil it too long. Twenty minutes is perfect. Shredding it while slightly warm also helps.

Fixing small problems builds your cooking confidence. It also makes your food taste just right. That is a delicious victory. Which of these problems have you run into before?

Description

Cozy up with a bowl of easy Chicken Fajita Soup! All the bold flavors of your favorite fajitas in a warm, comforting soup. Ready in 30 minutes.

Ingredients

Instructions

  1. Slice the onion into large chucks. Slice the bell peppers in half the long way and then remove the stem, seeds, and any unwanted white parts.
  2. Heat olive oil in a large pot/dutch oven over medium heat until hot and shiny. Turn oven to broil.
  3. Use 1 tablespoon of the fajita seasoning to rub into the chicken (use more if needed).
  4. Place chicken in pot, let cook on each side for 2 minutes until browned, 4 minutes total.
  5. Once browned add chicken broth, water, corn, onion, and the remaining fajita seasoning to the pot. Over high heat cover and bring to boil. Boil for 20 minutes until chicken is fully cooked.
  6. Meanwhile while soup is cooking place bell peppers skin side up on a sheet pan, place in oven on the middle rack. Let broil 10-14 minutes until tops start to blister. (Remember to keep an eye on the peppers past the 10 minute mark to make sure they don’t burn, each oven is different!)
  7. When the peppers are done, remove from oven and set aside to cool down.
  8. Once chicken is cooked through, remove chicken from soup and set on a plate. Turn the heat for the soup to low. At this point give the soup a taste to see if you need more flavor, if you are using my fajita seasoning you might want to add salt but if you use a seasoning with plenty of salt already in it you are probably all set.
  9. The chicken needs a few minutes to cool down before you work with it so use this time to cut the peppers into strips. Once chicken is cool enough to handle, use to forks to shred into bite size chunks.
  10. Add the chicken and peppers to the soup. Gently stir together. Serve immediately, with optional garnishes.
