  2. Cut the chicken into thin strips. In a different large bowl add the remaining 1 tablespoon of fajita seasoning to the chicken, mix to coat. Set aside.
  3. Heat a large skillet (preferably cast iron) over HIGH heat. Once the skillet is hot add the oil.
  4. Add the peppers and onions to the hot skillet. Cook tossing often 4-6 minutes or until the peppers and onions are slightly charred and starting to soften. Carefully remove the peppers and onions onto a clean plate or bowl (cover the keep warm).
  5. Add the chicken to the hot skillet. Cook the chicken 4-6 minutes, tossing the chicken occasionally. Keep the chicken spread out on the skillet to get a better sear. Since the chicken is in thin strips it shouldn’t take long to cook. So once the sear looks good check for doneness then remove from the heat.
  6. Serve everything immediately while it is still nice and hot!
