  1. Prepare the salad by chopping up the romaine lettuce, chop the lettuce a little smaller than you normally would for best results. Add the lettuce to a bowl. Chop up the croutons and add them to the lettuce. Add ¼ cup of the parmesan cheese and the caesar dressing. Toss everything together well and set aside.
  2. Preheat a blackstone grill, electric griddle, or large skillet over medium-high heat.
  3. Add the chicken to a bowl along with the remaining parmesan cheese and the salt and pepper to taste. Mix everything together. Divide the chicken mixture up into 8 even sections.
  4. Take one of the sections and smear it on to one of the tortillas spreading it over the entirety of the tortilla. Repeat with the remaining tortillas.
  5. Add the tortillas to the heated grill/skillet chicken side down, do this step in batches depending on what you are using to cook the tacos. Let the tortilla cook on the chicken side for 3 minutes. Flip and cook another 30 to 90 seconds on the tortilla side. Remove from the heat.
  6. Serve the smash tacos by adding the Caesar salad to the hot chicken tacos and enjoy!
